A long time ago, I thought I'd bake cookies for my mom, for Mother's Day. I must have screwed up somewhere because the cookies turned into one giant cookie, and it also tasted really bitter. I was not a baker.
But now:
Yay! This is the first time that I baked something by myself and had it actually turn out. I started with a vegan recipe that I found online (oops I lost the link), messed with it a little, and un-substituted the ingredients with their non-vegan counterparts. I also don't have a non-rusted cake pan, so I lined a pan with parchment instead of just using a greased pan.
1/2 c margarine
1 c sugar
4 eggs
1-3/8 c flour
1/2 tsp baking powder
1-1/2 tsp vanilla extract
1/4 c milk
1. Preheat oven to 325 F
2. Cream margarine, sugar, eggs together (I used a hand mixer on low)
3. Add flour, baking powder, vanilla, milk. Mix until smooth.
4. Grease pan or line with parchment. Pour batter into pan.
5. Bake for 45 min. -ish. The original recipe called for 30-40 min but mine wasn't done until almost 50 min.
This cake is probably very fattening but it tastes light and is pretty fluffy. Tastes good by itself but I bet it'll be good cut into thin layers and made into a decorated cake. A little less sugar would be ok since it's really sweet as is.
